The problem I had to address

The problem I had to address carbon-wise, however, is the high energy use of roasting. I was curious as to whether I could produce a similar effect by pan frying them using my induction hob. I'm always a bit cautious about turning on my oven, as I'm aware it uses a lot more energy than frying, but I'd never tried to recreate the crispy, fluffy texture of roast potatoes in a pan.
